Popping desserts into the oven is fun, but it’s also time consuming. This is the perfect recipe for exactly two cupcakes in less than ten minutes using just your microwave! I got the inspiration for this recipe from Katie. These cupcakes are so easy to make that if I’m every craving something sweet but healthy, I just make the mix in a few minutes and pop it in the microwave. You can even replace the M&Ms with other things like fruit (blueberries, strawberries, etc.) or chocolate chips and turn it into a more breakfast-like cupcake.
Yields exactly 2 Servings
Serving Size: 1 cupcake
6 tbsp flour (I used whole wheat and it tasted just fine, but you may prepare all-purpose or gluten-free depending on your dietary needs and taste)
1/8th tsp salt
1/2 tsp baking powder
2 tbsp M&Ms (you can use sprinkles too if you want it to be more funfetti like; if vegan, use vegan chocolate chips instead)
1 tbsp brown sugar (optional only if you want extra sugar – you can use liquid sweeteners or packet sugars like Stevia, etc.)
2 tbsp oil or melted butter (I used olive oil – you can also use coconut oil, applesauce, vegan butter, or canola oil)
3 tbsp liquid (I used water – you can use milk if you wish)
1/2 tsp vanilla extract
1. If you wish to bake them, preheat the oven to 350 F.
2. Mix the dry ingredients first in one bowl and mix the wet ingredients in another. Pour in the wet ingredients into the dry once both are mixed well. Wrap in the M&Ms into the batter softly.
3. Pour the batter evenly between two muffin tins (if they are foil tins, you will not need to spray them; otherwise, spray the muffin tins with PAM or rub a little oil or butter along the tin). Make sure your batter is smooth at the top.
4. Place the two muffin tins with the batter into the microwave and cook for ~5 minutes. Everyone has different microwaves so I suggest stopping the cupcakes after 2:30 minutes and checking how cooked they are with a toothpick by sticking one end of the toothpick into the center of the cupcake and pulling it out. If it is completely clean, your cupcakes are done. If there is some batter stuck to the toothpick, place them back into the microwave for another two minutes and check again to see if the cupcakes are completely cooked.
If you choose to bake your cupcakes in the oven, place them in for about 10-12 minutes and check with a toothpick like above to make sure your cupcakes are completely cooked.
