I love eating whole grains for breakfast so today I tried a mixture of quinoa and oats. I was craving some chocolate so a threw in a few semi-sweet chocolate chips to make this breakfast delicious and balanced! It’s important to have a heavy breakfast to jumpstart your day and this recipe gives you whole grains, MUFAs and other healthy fats like omega-3 acids, fiber, and the perfect amount of sweetness.
Yields 1 Serving
Serving Size: 1 bowl
0.25 cup rolled oats
.25 quinoa cooked
.5 cup water or almond milk (you can use your typical daily milk if not vegan)
10 strawberries, diced
10 walnut, halves
30 chips or 25g of semi-sweet chocolate or carob chips
1 tbsp flaxseed ground
** The add-ins (chocolate chips, strawberries, walnut halves) can easily be changed depending on your taste. Try to get a good balance between protein, carbs, and protein to give yourself a perfect breakfast balance! Some other options for add-ins are the following: nuts (almonds, walnuts, pecans, pistachios, cashews, etc.), chocolate chips, raisins and other dried fruit, chia seeds, flaxseeds, etc.
1. Place the rolled oats into a bowl and pour in the liquid of your choice (milk or water). Cook the oatmeal in the microwave for about 2 – 3 minutes depending on how cooked you like your oatmeal. Add or remove the amount of liquid you put as well depending on if you want your breakfast more watery or more thick. Spoon in your tbsp of flaxseed.
2. Mix in your cooked quinoa (you can cook your quinoa with a rice cooker and water). Mix in your toppings (I used chocolate chips, walnut halves, and strawberries).
3. Eat warm!
