Heart Healthy Minestrone Soup


The Recipe

Yields 4 servings

2 cups whole wheat pasta, cooked

1 cup red quinoa, cooked

2 cups garbanzo beans or cranberry beans, cooked

4 cups low-sodium vegetable broth

1 squash, diced

30 cherry tomatoes, diced

3 cups kale leaves

1 cup shredded carrots

1 tbsp cumin powder

1 tbsp onion powder

1 tbsp garlic powder

1 tbsp turmeric powder
