Lemony Raw Quinoa Edamame Salad

For a quick, hearty, and delicious lunch salad for two, I made a quinoa raw salad with a bunch of vegetables and blueberries! It’s full of protein, vitamins, and nutrients! I used fresh lemon juice as the dressing and it was the perfect consistency and taste!

The Recipe

Yields 2 servings

1 cup edamame, shelled

2 cups kale leaves

1 cup shredded carrot

1/2 green bell pepper, diced

1 large cucumber, diced

1 cup cooked quinoa

1 tbsp seaweed (optional)

1 cup blueberries, washed

1/2 lemon worth of juice

1 tbsp extra virgin olive oil (optional)

1 tsp salt (optional)

Directions

1. Cook your quinoa in some water on the stovetop. I place the seaweed in with the quinoa.

2. Toss together the quinoa and all the vegetables. Top with the fresh lemon juice and black pepper. Add the olive oil and salt depending on your personal taste. Toss everything together evenly and serve.
